Grilled Chicken with Fruit Salsa

Grilled Chicken
Ingredients: ½ cup lemon juice
2 cloves minced garlic
1 tablespoon low sodium soy sauce
4 5.5-ounces chicken breasts
1 tablespoon minced ginger
1 recipe for fruit salsa (see below)
1 tablespoon lemon pepper
Procedure: 1.Combine first 5 ingredients in a bowl, mix well.
2.Add chicken and marinate for 30- 45 minutes in refrigerator.
3.Prepare grill.
4.Grill chicken for 4-5 minutes on each side or until internal temperature reaches 160 degrees.
5.Serve with fruit salsa.
Fruit Salsa
Ingredients: ¾ cup fresh, diced pineapple
1 tablespoon chopped cilantro
⅓ cup chopped kiwi
¾ teaspoon ground cumin
½ orange, chopped
Dash salt
¼ cup chopped mango
⅛ teaspoon pepper
¼ cup chopped red onions
½ teaspoon chopped jalapeno peppers
Procedure: 1.Prepare all fruit.
2.Combine all ingredients and toss gently.
3.Store in refrigerator until needed.
Yield: 4 4-ounces chicken breast and ¼ cup salsa
